Preheat oven to 350 degrees. Grease 9″ x 13″ baking dish
Dry Ingredients
1 cup whole wheat flour
1 cup brown rice flour
3⁄4 cup bran (oat & wheat) wheat germ
mixture
1⁄2 cup carob powder
1 tsp stevia extract powder
1 tsp baking powder
1 tsp baking soda
1⁄4 tsp salt
1 tsp cinnamon
1⁄4 tsp nutmeg (fresh)
Mix dry ingredients.
Wet Ingredients
1 cup chia gel
11⁄4 cup apple sauce
1+/- cup stevia leaf tea*
1⁄2 cup raisins
1+/- TB molasses
1+/- TB honey
1+ TB fresh grated ginger
1 tsp vanilla
2 eggs
Other goodies to add could be: dried apricots or dates or walnuts.
Mix wet ingredients. Combine wet into dry ingredients. Bake for +/- 1⁄2 hour.
*stevia leaf tea is made with the real dried leaves of stevia (like any herbal tea). Buy it in the bulk tea section of Corners. Steep stevia in a
pot, let it cool before use. Try steeping stevia in a teapot with your white/green/or black tea, it makes a fabulous tea to drink with the cake. If you are taking medicines closely monitored by your doctor, consult your healthcare provider before starting an intensive chia seed therapy program. Any soluble fiber source in sufficient quantity may delay the delivery of your medications. Chia seeds are a source of soluble fiber.
